Exotic Pina Colada Cheesecake Recipe

(6 servings)

Crust:
1/2 c VANILLA WAFERS or GRAHAM CRACKER CRUMBS
1/2 c FLAKED COCONUT
3 tb BUTTER or MARGARINE, melted

CAKE:
1 (8 oz.) can PINEAPPLE, crushed (drained)
3 (8 oz. each) pkgs CREAM CHEESE, softened
3 EGGS
1 c SUGAR
1 c DAIRY SOUR CREAM
3 tb DARK RUM
2 ts COCONUT EXTRACT

Preheat oven to 350-degrees. In a medium bowl combine cookie crumbs, coconut and butter. Press onto bottom and sides of 9-inch springform pan. Bake 10 Min. cool.

Cinnamon Apple Cake

2 cups flour
2 ½ tsp baking powder
1 tsp salt
½ cup sugar
½ cup shortening
2 eggs ½ cup milk
3 large apples
½ cup brown sugar
1 tsp mace
1 tsp lemon rind (grated)
2 tbsp butter
Sift baking powder, flour and salt into large bowl. Stir in sugar. Cut in shortening with pastry blender. Beat eggs with milk. Stir into flour mixture until blended. Pour into greased baking pan. Arrange apple slices in rows to cover top. Combine brown sugar, mace, lemon rind and melted butter in small bowl. Sprinkle over apples. Bake at 350 degrees for 30 minutes. Insert toothpick until clean.

No Egg Chocolate Cake (Moist)

3 cups flour
2 cups sugar
7 tbsp cocoa
2 tsp soda
1 tsp salt
¾ cup oil
2 tbsp vinegar
2 tsp vanilla
2 cups cold water
Sift dry ingredients together into large bowl and mix. Add oil, vinegar, vanilla and water. Beat well. Pour into 9x13 inch pan. Bake at 350 degrees for 35 minutes or until cake springs back when touched in middle. No frosting necessary.

Chocolate Banana Cake

2 cups sugar
1 cup shortening
½ cup milk
2 whole eggs
2 bananas (crushed)
1 cup boiling water
½ cup cocoa
2 ½ cup all purpose flour
2 tsp soda
½ tsp salt
Cream shortening, sugar and bananas. Add eggs, cream well. Add milk and flour alternately. Last add boiling water which cocoa has been added to and mixed. Mix well. Bake at 350 degrees for about 30 minutes or until done. Don’t use mixer.

Southern Fudge Cake

2 cups sugar
1 cup butter
4 eggs (beat in 1 at a time)
4 tbsp cocoa
2 tsp vanilla
1 cup flour
2 cups nuts (floured)
Cream together first 3 ingredients then add the rest. Mix well. Grease and flour pan. Bake at 250 degrees until cake is done using tester.

Graham Cracker Cake

2 pkg graham crackers
¼ lb butter
1 cup sugar
1 tsp vanilla
3 egg yolks
2 tsp baking powder
1 cup milk
walnuts
Cream together butter and sugar with vanilla and egg yolks. Roll out graham crackers adding baking powder, walnuts. Mix all ingredients together adding milk. Beat egg whites and gently fold into batter. Bake at 350 degrees for 20-30 minutes or until cake pulls away from edge. Top cake with frosting.

Easy Carrot Cake

1 cup sugar
¾ cup vegetable oil
2 eggs
1 ¼ cup flour
1 tsp baking soda
1 ½ tsp ground cinnamon
½ tsp salt
1 tsp vanilla
1 ½ cups grated raw carrots
½ cup raisins (optional)
Cream sugar, oil and eggs together until smooth. Combine dry ingredients and add to creamed mixture, mix well. Stir in vanilla, carrots and raisins. Pour into greased 9x13 in. pan. Bake in preheated 350 degree oven 30-35 minutes. When cool, frost with cream.
Cheese Frosting:
1 sm pkg (3oz) cream cheese, softened
¼ cup butter or margarine, softened
1 tsp vanilla
2 cups sifted powdered sugar
Beat cream cheese, butter and vanilla together until smooth. Add powdered sugar and beat. Add milk a tablespoon at a time to desired consistency. Spread on top of cake.

Sunshine Cake

10 eggs, separated
1 ½ cups sugar
¼ tsp salt
1 tsp vanilla
1 sp cream of tartar
1 ¼ cups sifted flour
Beat egg yolks until thick and lemon colored; add vanilla. Gradually add sugar, a few tablespoons at a time, and continue to beat until mixture is very light. Add salt and cream of tartar to egg whites and beat unil soft peake form. Gently fold beaten whites into yolk mixture. Add sifted flour, sifting a small portion at a time on top of the egg mixture and folding until well blended. Turn into an ungreased 10 inch tube pan. Bake 30 minutes at 350 degrees. Reduce to 300 degrees, continue baking for 30-40 more minutes, or until done. Invert pan. Cool for 1 hour. Cover with Eight Minute Frosting.

Overnight Cake

Mix and let stand overnight:
2 cups sugar
2 cups sifted cake flour
1 cup boiling water
pinch salt
Next morning make:
2 tsp baking powder
5 egg whites (beat until foamy)
½ tsp cream of tartar, beat until stiff
1 tsp vanilla
Fold this mixture in with the overnight mixture. Bake at 350 degrees in floured pan. no time specified
½ cup butter or margarine
1 cup sugar
2 eggs
2 cups flour
1 tsp baking powder
1 tsp soda
½ tsp salt
1 tsp vanilla
1 cup buttermilk
Topping:
1 cup chopped nuts
½ cup sugar
½ cup brown sugar
1 tsp cinnamon
For cake: cream butter, sugar and eggs together. Sift flour, baking powder, soda and salk, and add alternately with buttermilk to creamed mixture. Add vanilla. Spread half of batter in bottom of 12 x 7 ½ inch pan. Top with half of topping mixture, then remaining batter, then other half of topping. Bake about 40 minutes at 325 degrees.
For topping: mix all topping ingredients together.
